The biggest thing is having options for each of your professions, and the cost to get them. Perks are useful too.
Jewelcrafting has the option of stam or mastery for tanks and strength for DPS, with the perk of making your own gems.
Blacksmithing has the option of stam or mastery for tanks and strength for DPS, with the perk of making your own armor, but having extra gem slots to pay for.
Leatherworking has the option of stam for tanks (instead of the normal dodge or mastery enchant) and strength for DPS, with the perk of cheap leg/wrist enchants and
Drums of Speed/
Drums of Panic.
Alchemy has the option of stam for tanks and strength for DPS if using flasks, and mastery with dodge or armor if using elixirs, with the perk of longer lasting flasks to save money, and transmute CDs to make some money.
Engineering has the option of armor or dodge for tanks and strength or straight up damage for DPS, with the perk of... rocket boots, cardboard assassin, slow fall enchants, mind control enchant, possibly new bombs, possibly new goggles.
Inscription has the option of stam for tanks and strength for DPS, with the perk of not needing to farm rep for normal enchants...
Enchanting has the option of stam for tanks and strength for DPS, with the perk of being able to enchant your own gear and disenchant.
Mining only has stamina, with the perk of being able to mine/smelt.
Almost all of them have the same itemization, the options you get and what they replace is what matters.
Jewelcrafting and Blacksmithing are obviously the most versatile, but Leatherworking would get a big advantage if stamina is more valuable than mastery. Alchemy and Leatherworking have great perks for raiding.
