Mining is always a good start when trying to make some cash since so many other professions use the ore and gems in so many ways. Herbalism is also good, which you could also get guildies to craft pots for ya if your not a alchemist yourself. Now as for a actual profession, it sort of goes by your play style. Blacksmithing would be the obivious choice since you could make you own weapons and armor. But i personally went with Engineering, its gots its advantages too. My suggestion is to look at some of the crafting lists and see what you think would Interrest you.

Mining/Herbalism + Skinning. Leave the choice of your profs till as late as possible.
Pros:
Easier obtained luxury goods - 5k riding grind less of a stress;
Flexibility on the AH - you can buy armor, weapons, flasks etc. Not getting restricted by what your prof gives you but being able to choose is what i favor;
Flexibility when joining a guild - you can fit what they need, which might come as a plus;
Cons:
Crafting profs also give some nice passives and enchants that are usually BoP or exlusively for crafter.
That's what i can think of, but i'm an avid fan of 2xgather for leveling.
Once at 80 it again depends. For retri/prot i'd say BS, Engi or JC give most benefits as a first crafting proffesion. Holy might go well with Enchanting or JC. To be honest, proffesions are far from finished - just check what new patches will bring, it varies with every update.
