Okay, I just made a gnome mage for the fun of it, and I want to know, what are the best proffessions. Right now, I'm Mining/tailoring, but any suggestions on a good balance of money making/usefulness

since it's brand new i'd currently stay away from tailoring/engineering as they offer basically no advantage over other professions. If money doesnt play into it JCing is probably the best as the prismatic better gems help you to get whatever meta you want to socket easier plus offer the increased bonus to them. Other than JCing, the other crafting professions offer reasonable stuff. inscription saves you doing Sons of Hodr rep (not a huge thing but a definte time saver)
basically what it comes down to as far as "best" professions to take though is how you feel about dual crafting vs a sensible crafting + gathering. If you don't mind dual crafting id personally go JCing + alchemy or inscription as a new char. otherwise JCing/ mining

JCing/Mining. Right now tailoring isn't worth it(this may change by 3.1), all the gear is boe. Jcing gives you raw stats boosts(hit/crit/massive amounts of spell with dragons eyes with whatever you choose). It's probably the best profession at the moment. Mining will give you a huge surge of gold as well.
The only other thing that can be best coupled with JCing if you have a support profession is leatherworking. Best bracer enchant in the game, and the leg enchants for other classes will always sell for insane amounts of gold. Otherwise it's a pretty dead profession. Inscription...it depends on the server. Sons of Hodir, it's a moot point--In a few weeks you'll be able to start buying relics of uldar off the AH and turn those in for 10@250/rep
