Im a prot warrior with def capped. Currently i have some confusion among the stats (dodge, parry, block, stam, block value). Can anyone help me point out which is more important so that its easier for me to gear up.

There is no need for a headache. Protection warriors dont have just 1 tanking set. You can create a few, depending on the situation (eg, more threat oriented sets and more avoidance oriented setups).

http://www.wowhead.com/?item=37689 avoidance neck. The typical manner is to use avoidance sets for progress content (raids, hard bosses), while threat setups on easy contents (thrash, 5mans, OTing etc). Threat setups are also better for solo grind.
Trinkets are a bit different. This
http://www.wowhead.com/?item=37872 suits good only for aoe tanking of easy thrash. SBrating isnt as important for warriors as SBValue. We arent Tankadins. And we got
http://www.wowhead.com/?spell=2565 (10s duration, 40s cd = 25% uptime). The trinket offers heavy SBV though but only on use, so as i said above. Only situational.
