What kind of +hit should I be aiming for (in % and number if you know) for PvP.

Hit isn't as valuable of a stat in PvP, as it results in consistent damage (consistent damage is easier to heal, whereas burst damage is harder to heal), but it's still valuable because it results in more overall damage taken by the opponent.
Against a same-level player, you should have a 5% chance to miss, barring any talents the opponent has (such as frigid deathplate...actually I think that's the only one) so 5% hit.
