Interesting - I'd be interested to know this as well.
Resilience will mitigate overall damage, making you more "survivable."
Stamina will increase the amount of damage you take, also boosting heals from Ardent Defender, making you more "survivable."
It seems to me like they'd be equal - go one way or the other. However, I'm like you, a PvP heals mainspec, so someone else more knowledgeable should give you a definitive answer.
/interested to hear this.

i would think that stacking resilience to around the point where crits on you are ~6k? (not a big pvp'er here), and then going straight stam would be the way to go. the big thing is how much res would you need to get to that point that i just plucked out of the air?...
also, the biggest issue i have in pvp'ing as prot is that i cant kill anything..at all. had an arena time out on me when fighting a sub rogue... so while survivability is great, it might be good to balance with a good dose of dps stats
Resil doesn't reduce critical strike damage any more. It reduces overall damage taken. It would take 87% mitigation (napkin math) to reduce a 45k crit to 6k. Resil caps at 50%, and the cap is almost completely unrealistic to reach with the current gear available this season.
Having seen that, would you suggest gemming stam?
Gemming STR is another completely viable option, something I planned to if I ever geared up a prot PvP set. Prot has a
huge
amount of tools to survive in its disposal - I'd rather have a little bit more
oomph
in my attacks and maybe die 10 seconds sooner.

For PVP, it's not so much Sta vs Resil as finding ways to increase your burst damage. We're always going to have great survivability but, as Karathos said, killing things can be slow. But with the right glyphs, talents and tactics it's possible to string a few 30+k crits together.
But Taugrim's guide explains it better than I could...
