There are mods out there that "save" gold as well.
Look up DepositBox or NazScrooge. I believe DepositBox has been updated recently for WotLK, while Scrooge hasn't, but still works.
These mods allow you to set aside a percentage of what you earn so that you can't spend it unless you actually go in and say /withdraw X amount. You can also tell them to keep a minimum in your bag, or to try to reach a certain amount (like 5000G for epic flying, for example). It's the only way I can keep myself from spending all my gold, as I'm also terrible with in-game currency and tend to spend it on mounts and vanity pets. ;-)

I used to use all my gold then I learned a very important lesson.
1 never visit the AH and if you must only look up the stuff your puting on the ah.
2. Never lvl your Proffesions untill you have what you want.

Use Auctioneer and sell all the useless greens and above as well as mats and recipes that you picked up from soloing and in dungeons. If I didn't waste money in the AH and on alts, I'd have 2k-3k gold right now as a lvl 54. You can make even more money by buying low and selling the items for market value.

I dunno questing/farming/selling quest rewards I was making about 1kg a level. Spent alot of it on nonsense stuff like going for the 50mount achievment, only at 36 atm. However to save my gold I keep about 500g on my main and main alts(over lvl 70) and send all the rest to my bank alt. This alt holds my gold until I have real need of it, I know 30c for mailing thing, but hey when I was able to have about 12kg at one time was nice. Even better it was sitting on a level one toon wearing a tux =P. However, bad loans to people and my nonsense spending in WotLK has cut me down to nothing...

My first level 70 was pretty much like you. Every time I Ding'd, I would head to IF to train (class and professions) and upgrade at the AH. Big mistake...
Go to town only every other level, and then only to get new spells. STAY AWAY FROM AH! I send all my Whites, Greens, Blues and Epics (well, I never got an Epic drop yet) to my banker alt. I use Auctioneer and put all non-BoP stuff in AH via my banker alt. I only put things in on Friday, then for 48 hours, so all my auctions are there for the weekend.
Also, when you are offered an item as a quest reward that is worse than what you have, look at all rewards and choose the highest price one. Then sell it.
Find out what is the high dollar items and grind for them. I set aside a day (maybe 2) a week just to grind. Frostcloth is always a good item. Check and see what items are needed for high-end recipes for all professions, then farm them.
If you don't have a gathering profession, unlearn something and get one, preferably Mining (it has a decent Stamina buff to boot).

from the time leveling from 70-80, you should have earned about 5-6k in quest rewards and drops. And thats with selling those drops to vendors.
but yes the best way to save gold is to, well save it. You shouldn't have bought any gear while leveling as quest rewards are more than enough to level with. The only things you should buy while leveling (or farming gold) is vendor food, regents, and training.

When I entered Northrend with my mage, I planned on having a nest egg just to be on the safe side.
I trained professions - bye bye 400.
I entered Dalaran by 6pm the first day and bought a bear. Bye bye ~750.
Made enough to recup both those expenditures by level 73...
And didn't set foot in IF to train until 74 when I learned the new Blizzard.
I sold all the plate rewards from quests that I didn't use (with only a few exceptions; I looked up reward prices here) and ended up with plenty of gold when 77 came around for Cold Weather Flying.
I can only echo a few of the sentiments shown above.
-Stay out of an AH city.
-Skip spells. As a mage, this was really easy for me because outside of Blizzard @ 74, Frostfire Bolt at 75, and the new Fireball/Frostbolt/Icelance at 78-79 I had no real reason to upgrade spells.
-Repair where you are Exalted. (If this happens to be an AH city, STAY AWAY!)
-Avoid flight paths. Taking ten trips back and forth from Valiance Keep to Dalaran adds up at 1.48g/ride.

- Do dailies
- Loot gray items and sell them to vendors (always worth a couple of gold but it does add up)
- Vendor the BoP quest items that you don't use.
- Do quest at level 80 and get the gold bonus for being 80.
- Get two gathering professions, take time to gather and sell them on the auction house.
- Find an item worth farming that sells for a good amount. I'm not talking about a 500+ gold "one" time item. I'm talking about 10-20 gold per item. Getting a stack of these and sell them on the auction house.
- If you are in the LFG and waiting for a group for an instance, do quest or farm items.
- Do not buy items from the Auction House. Chances are you can find an upgrade from quest or instances.
- If you need a crafted item, farm the mates and find a guildmate to make it for you. Tip him a gold or two but he might do it for free. If you can't find a guildmate, find someone and TIP them 5-10 gold or more. Yes, you should tip them.
