One thing to consider, healers are in high demand. If you chose a priest, you may get constant tells to heal instances. this could get annoying after awhile. On another note with the r.a.f. bonuses, its very easy to hit 60. I did it and multiboxed 4 sets of toons past 50 well before the 3 months were up(no life i know). No reason why you cant do both.

Go priest. Priest/rogue was a common 2v2 arena combo for a reason. As a shadow priest you'll keep the both of you topped off, and be able to save your butts if it hits the fan. Up until at least 50 you can heal fine spec'd shadow, too, if you decide to run an instance or two. And it'll be especially better for elite quests later on, when you can heal him through it.
