Do you want a class similar to your shammy or something entirely different?
If you want something similar, roll a different hybrid class, like Pally or Druid. If you want something different, roll a single-role (or at least more limited) class like Mage or Hunter. Also, it depends on your spec--if you were Elemental and want to try something on the other end of the spectrum, go for a Warrior, Rogue or Death Knight. If you want to stick to something relatively similar, go, say, Mage or Warlock. This counts for the other specs, too.

Yes, level all the classes to level 80 and then delete the ones you don't like. It's so simple!
This makes absolute sense!
But seriously, since you've narrowed your choices, just fool around with those classes a little no need to level a lot but get the feel of it.
