For 10-man instances:
1. Spellpower - The foundation of your spells.
2. Intellect - A huge mana pool is important when it comes to mana regenerating abilities such as Mana Tide Totem.
3. MP5 - You will need to regenerate mana one way or another. Paired with Water Shield and Mana Spring Totem, this will allow you to cast a lot more spells.
4. Haste - More haste is less time not in control. Directly affects your global cooldown as well.
5. Crit - Multiple uses. First and foremost the +armor% buff for your tank, and secondarily: on Lesser Healing Wave and Healing Wave, critical heals proc Ancestral Spirit.
6. Stamina - Being dead kindof sucks for your healing output.
And in 25-man instances I would prioritize +haste and +crit over MP5. The raid (Shadow Priests, Hunters, Paladins) should replenish your mana fast enough anyway.

Actually this topic has recently been debated by theorycrafters. While stats such as SP, Int, Mp5 and stamina (in fights where healers get hit too) are important in most scenarios, the priority of haste and crit largely depend on your purpose and spec.
Haste: more important for Chain heal spamming fights (raid group healing).
Crit: more important for LHW (and HW sometimes) spamming fights (MT and heroics healing ), several talents (imp WS and AW especially) makes investments in crits worthwhile.
All in all, unless you are in a hardcore guild with specifc raiding assignment, you want to have a good balance of all the above-mentioned stats.

These guys have some great advice. I taught myself to heal by running lowbie dungeons. Healing regular Ramps and BF taught me a lot (I leveled from 69 to 70 by doing this). Doing this will tell you what stats you're lacking. In my case, mana and mana regen, solved by gemming int and dropping crit for MP5 (I was running with DKs).
