if you roll a priest, be ready to face constant pressure of respecing to holy for instances and then to shadow for your own fun in pvp, unless you want to heal.
rogues are pretty easy to level and are also fun in pvp.
to be honest, the only way to choose is to play both until around lvl 20 and then decide which is more fun.

I've played Shadow Priest from 1-70, and I raid on a casual basis as Shadow/Disc. People love me for my massive mana stream to the group, and healers love me for the aux heals I throw around due to VE. I can keep pretty good DPS, and depending on my spec, I can make or break boss fights that require longevity.
PvP-wise, I am best on the sidelines. I can take some classes head-on, but rarely will I come out unscathed unless I'm against a badly-geared or unskilled player. I find it best to operate out of reach, throwing DoTs around and fearing those who get too close.
Level 20 is NOT a show of what a character can do at 70, or even 60 or 50. Play a druid or warrior to 20 and you'll see what I mean.
tl;dr: People don't ask me to respec Holy ever because I'm good at being Shadow. It is a fun, challenging, and rewarding class to play. I find rogue to be WoW on EZMode, a lot like Hunter used to be (and to some extent, still is)
