I've read a fair bit in various places about the need to equip a slow off-hand (enhancement btw) and that Windfury is best imbued on both weapons.
I'm a little confused by this so maybe someone can help me out - I've been levelling with Flametongue on my off-hand (and WF in my main) as I figured that Lava Lash needed it. Should I be switching to WF for both? If so, does my LL end up too nerfed?
Also, if slow is best on off-hand, is it presumably also best on main hand too? I've just selected weapons based on maximising the agility boost so ended up with a fast dagger in my main hand for ages but now I'm at 81 and some more options are becoming available.
Any explanation in layman's terms would be appreciated.

You heard wrong, you've been using the correct imbues. You should never ever ever put Windfury on your offhand, especially after 4.0 with the change to Lava Lash

Never ever ever ever use a dagger for your main hand. 75% of your auto swing dmg is from your main hand, Windfury procs use weapon dmg, and Storm Strike uses weapon dmg. You are gimping all three of those by using a fast
offhand
main hand. Maelstrom Weapon is also a ppm based off of weapon speed so you'll get fewer procs using a fast weapon.
Slow > fast because unless you're comparing, say a lvl 85 dagger (cata) to a 79 slow axe (wotlk) with a HUGE difference in ilvl the
slow weapon will have a higher dmg range
, this is what's important. You always want the weapon that hits the hardest, not
necessarily
the one with the highest weapon dps.
Slow/Slow: WF/FT (PvE).

At the moment I have a dagger and a nice slow mace. Until I manage to find another slow weapon should the dagger go offhand then? so that Windfury procs off my heavy-hitting mace?

Yeah, typo. Sorry for the confusion. I meant main hand. If you have to choose between two weapons for your main hand and offhand, you always want the hardest hitting weapon (
usually
the slowest) in your main hand.

What about while lvling as enhance? Should you have windfury on both weapons, or windfury on your main and flametongue on your offhand?
Always WF/FT for PvE, as soon as you learn Windfury.

Yeah, that was the case because Lava Lash hit like a wet noodle. Now that it's our biggest single attack anything that props up it's dmg, like Flametongue, is much better than before.
