Just thinking in the long run here, so keep that in mind. The Eye and up, basically.
It seems to me that the only two professions that are of any real use when you get *really* high up there on the raid progressions, are Enchanting and JCing. Actually having JCing allows you to socket your items with BOP gems that non-JCs can't get access to. Enchanting your own stuff means you can put extra stats and such on rings. Since every item you'll ever make with other professions grows useless in the face of BT gear, wouldn't the only valid approach be to just improve the uber gear that you'd get from there? Discuss.
(Btw, I'm just theorycrafting. I myself am nowhere near the BT level of raiding.)

Enchanting your own stuff means you can put extra stats and such on rings.
Gems = 3 extra itemization values
Ring enchants = 20 (10/per) extra itemization values
sure, if you think that 23 itemization values are more important than your current profession, get JC and enchanting
as for me I would keep my gathering/crafting profession for items that rival T7 and T8 when WotLK comes out as that will help with my raid progression
by the way, 23 itemization values translate into:
tank: 23 stamina or ~ 260 HP
physical DPS: ~48 AP or ~3.5 DPS
spell DPS: 28 spell damage or ~50 damage/cast
Healers: 55 healing spells or ~75 heal/cast
not that much of a difference if you have 14000 HP or 1100 DPS or hit 2000/cast or heal 3000/cast
