I tend to ignore socket bonuses and just socket with what I need. The only socket bonuses I usually meet are the +stam ones. As a general rule, I will socket with +12 stam. However, I've been making sure to include some +hit gems recently and I have a couple of the heroic gems in there too when they're useful for meeting the stam socket bonuses.
Regarding healers saving mana: generally, healers will heal regardless. I know very few healers who cancel their heals when a tank dodges a hit. Dodge/parry is great but it starts getting detrimental when you start having rage issues, a number which I usually see bandied about as more than about 45% combined dodge/parry.
Basically, dodge/parry/block are needed but so is a nice big healthpool. If you're low on defense, socket with defense. If you're low on hit, throw some +hit in. Other than that, though, you'll want to be stacking as much stam as possible in your sockets - I'd rather have that extra 12 stam than the +2 parry from the socket bonus.

Kay, this is all true and whatever - but speaking from a Main Tank position stacking stam (NO MATTER WHAT THE SOCKET BONUSES ARE) is the best way to go. In full tanking gear with all my +12 gems and a couple +15's I can hit a max of 16.5k life unbuffed (and im an orc), with full raid buffs, fort, motw, food, flask, etc etc....i broke 20k life with 17ishK armor. both my parry and dodge were about 40% combined with a total block % of ~29%, a total of ~540 defense with gear alone, and about 40 +hit...this gear is STRICTLY for stamina instensive fights where you know youre going to be taking 5k+ hits at all times.
Mitigation in itself for a warrior is where we stand out for the most part, the only thing is if you stack too much mitigation then you're starved for rage, which, in return messes with your TPS and makes the fight so much longer and more healing intensive.
Another thing to keep in mind is that you should have different sets of gear for different fights, so - for example on Gruul the Dragonkiller - I use my stam set, as he can hit pretty damn hard if you get the growths too high. On the other side i can put on my mitigation set(~46% total parry/dodge and about 35% block) for a fight such as Fathom-Lord Karthress.
One last thing is to have a Block VALUE set. the more block value you have, the higher shield slam hits for, thus, more TPS. So, for a fight such as Void Reaver where you have multiple tanks fighting for agro, you can slap on your block value set(i maxed out at 620 block value = 1100-1150 non crit shield slams, i was seeing about 1800-2000 crits) and you shoot way up on agro every time that the cooldown is up (which you should be doing regardless).
