Shift+left click the item and a box will appear you can choose the number of items you want to pick up.

Press shift, keep it pressed and click on the item. Should open a small window where you can select the amount, e.g. you got a stack of 20 Netherweave Cloth and then you open that window, type in 5 and click in your inventory and it should make a new stack with 5, and the old one has 15 then of course.
Another thing that helps is to press ALT when you trade multiple items. Pressing ALT and clicking the items will place them right into the trade window.

Is that an addon at work, or the default UI? I know in years past I had a mail mod that added that functionality, because it was not part of the default.

I have to admit, that I am not sure. I have a mailmod in order to make mass-mails but I don't know if it adds the ALT function too. My guess is that it is a regular feature of WoW and does not require any addon.
