Including all recipes you've learned for it, I suppose? (ie, they wouldn't just be grayed out until you taken the profession again and leveled it up)

That's right, you lose all recipes for professions you drop, which can be a problem for those that you learned as quest rewards as you can't do the quest again.
If you're in that situation speaking to a GM might help, but it might not.
