Only one quick question...
When grinding... a prot warrior shall use defensive stance and tank gear? or the dps gear?

Defensive stance and DPS gear, with a shield. If you have some tank gear with block value then you can use that as well.

My 70 war tank was in kara and za gear before WotLK was released, and for having no dps gear, I managed to do the sunwell dailies and level 70-80 with nothing but prot gear. I didn't run into any problems whatsoever taking on 2-3 yellow mobs and bandaging up in between fights. Also, frenzied regeneration was a godsend as the cooldown was normally up before I went below 75-80% health. I suppose if you have the dps gear and it works better for you go with that.

Not agreed on that.
Going protection with dps gear makes you a mediocre survivor because the loss of avoidance/stamina, and a less than mediocre damage dealer since most abilities require defensive stance, and your damage output is lowered anyway.
Protection gear boosts defenses, hence giving you higher chances to trigger avoidance (revenge hits for a lot), as well as more chances to have a critical block (refreshing the cooldown of shield slam, which is the highest damage dealing skill).
Sure, it may require a few more time to down an enemy, but you're nearly invincible.
Leveling as protection with protection gear, i've pretty much never had problems doing quests, quickly too.
15 mobs trying to hit me? what's the problem? i'm a tank! shockwave/thclap/shield block, and with calm and tranquillity kill them one at a time, while the others try to hit me, inflicting ridicolously low damage when they do.
The only occasion where i had to move to a non-defensive stance in all my wotlk experience was when raiding as OT, where only one tank was needed and i helped the dps in battle stance (zerk stance would have been too risky), because revenge wouldn't be triggered since i was supposed not to have aggro, and the threat loss as battle stance was more than handy.
Just in case of STD (Sudden Tank Death), i could've switched stance and taunt the boss.
I don't recall any other occasion when battle stance and zerk stance were useful, though.

I can easily pull 15 mobs in my DPS gear and AoE them down before losing too much health. The difference is that I can also deal with single or few mobs without it taking ages and ages. Grinding in tank gear is a waste of time. Having the mobs beating on you for longer also means that you take the same damage overall as when killing them quickly in DPS gear.
With more than a couple mobs on you, revenge will light up almost instantly regardless of what gear you are in; so you will simply be limited only by the cooldown.
As for survivability, I only died a handful of times on the way from 70 to 80, and all of those times were either very difficult group quests or paladins.
As for stances, you must have missed where I specifically wrote that I recommend staying in defensive stance. Being in DPS gear doesn't magically delete defensive stance. The main reasons for coming out of defensive stance would be to pop retaliation or, in PvP, to intercept when charge is on cooldown.

i'm not too sure, but we are able to use retaliation in any stance, as well as with warbringer, we can intercept in any stance too?

Retaliation
can only be activated in battle stance, and
Warbringer
only allows charge to be used in any stance, not intercept or intervene.

I am using pretty mixed gear. Basically the same gear i use to PvP.
I switched some typically defensive gear for AP/crit rating stuff from my PvP setup. I kept the badge/ZA stuff on me due to high expertise/SBV and nice other stats.
I dont use the gear i used to wear in dps situation - my hit got a bit lowish, but its ok.
I tried wearing it, but with shield there is no point in stacking hit as much as with DW. Plus i am loosing hell lot of dps without shield.
PS: I use defensive stance always. For the revenge.

i'm doing the daily at Icecrown.... i farm and grind in prot gear and in defensive stance.
I ride my mount, i pull 4 or 5 mobs and then take them down all in once with shockwave, cleave and thunderclap... it's not that hard once you've understood how to do.
Moreover normal mobs aren't able to harm you... you can kill packs of them losing maybe 20% of your life... then you use
Enraged Regeneration
and you can keep on fighting....
I've soloed some group quests too (also some steps of battle of Valhallas)... and it works quite fine...

defensive stance always.
i use a mixture - starting with my tanking gear, and substituting some slots for high crit pieces if i have them.
