The title of your post is Defense cap, we don't have one of those anymore. Crit immunity is granted through talents, so we no longer have to stack defense or resilience to reach that point. Defense is still a valuable stat, as it adds a little bit of miss and a little bit of dodge, but it will do that forever, there's no cap.
So with respect to defense, you could tank Naxx with 0 defense, or 1000 defense, as long as you had enough HPs, armor, and dodge also. Defense is just another avoidance stat now, it has nothing to do with Crit immunity for us it just adds a little dodge, and a little miss. Resilience is next-to-worthless in PvE for us now.
If you just want generic numbers, how about... Raid buffed you should have around 35000hp, 30000 Armor, and 35% dodge. Heroic buffed maybe a little less HPs and dodge.

i dont see how u will be able to have 30k armour... i mean the reduction to armour on rings weapons etc is incoming, atm i got 37k hp 24k armour and 42% dodge...
i wont have that armour anymore, but hey at least i seen the 'nerf' of sorts coming and i got dodge to fall back on

If you use any kind of armored rings, trinkets and necklaces plus armored staves you can find NOW, you can easily beat 30000 armor. I only use the
Getekeeper
and
Ring of Earthen Might
(till I get a better drop) plus the beautiful
Origin of Nightmares
. No armor neck, no armor trinket. And I have about 27500 armor raid buffed.
AFTER the change in armor mechanics (armor from necks, rings, trinkets, weapons and bonus armor of cloaks will no longer be multiplied in bear form) and the introduction of (supposedly) the +20/40/60% armor bonus to leather items in the Survival of the Fittest talent, the drop in armor value shouldn't be that big and besides it is supposed to widen our choice of tanking jewels, cloaks, trinkets and weapons.
To answer your question about stats required to tank heroics/Naxxramas, I started heroic tanking with about 24K HP, 20000 armor and ~30% avoidance. That may seem kinda low, but with skilled players in the group and the smart use of CC, I did many heroics just fine. For entry level gear required for tanking Naxxramas, I strongly reccomend that you get the
Durable Nerubhide Cape
, and the Trollwoven
Girdle
and
Spaulders
. Also the two Quest rewards
Exotic Leather Tunic
and
Handwraps of Preserved History
are great starting gear for both HCs and Naxxramas (till u get Tier 7 chest & gloves for emblems). Get a hold of the
Chain Gang Legguards
, they are IMBA starting tank gear. Also I reccomend the
Enraged Feral Staff
(from HC Utgarde Keep) or, at the cost of armor, get the
Staff of Trickery
from HC Violet Hold (entry level heroic imo, was the first one I did). Also buy the
Chained Military Gorget
for emblems, it is one of the best tank necks available to bears overall at HC dungeons/10 man raid level (no armor, but it boosts avoidance greatly, while providing hit rating necessary for threat).

Minor rant, I find it quite shocking how many feral druids cry about the 'nerf' to armour and have no idea how SotF will be changed.

No it wouldn't be obscene because the base health only is increased by 5% which means about 500-600 HP bonus.
And 30K armor is easy AT THE MOMENT with armored staves, cloaks, rings and necklaces. After the armor bonus will no longer be multiplied on these, total bear will go down anyway. Not by much but it will.
Somehow I don't buy that when you have full stamina gear on, you get 47K HP AND 39.39% dodge... Even raid buffed... AND 27K armor.

My point was not to cleave hairs over specific values lost or gained but rather the amount of druids that beat their chests over the armour nerfs and have no idea what you're talking about when you ask them how their armour will be affected by the SotF change.

For the Frost Resist set intended mainly for fights like Sapphiron in Naxxramas, the choices for gems should be in correlation with your other gear, in order NOT to get your avoidance too low by taking off pieces with agility. I for one, gemmed the three pieces by this rule:
1) Red sockets -->
Shifting Twilight Opal
2) Yellow Sockets -->
Vivid Forest Emerald
3) Blue Sockets (plus the extra
Belt Buckle
on the cord) -->
Solid Sky Sapphire
Some may disagree and say that I gimped my avoidance too much. I for one made some calculations for my particular case, and with the three pieces gemmed like that and enchanted for +8 all stats (on chest) and Icewalker (on boots), and raid buffed, I gained an extra 6K HP at the cost of losing ~3% avoidance, down to ~40% total avoidance raid buffed. Which is enough for that fight. In my book, 44000HP and 40% avoidance is better than 38000HP and 43% avoidance (anyway I was still wearing some blue pieces with not that high amounts of agility). And I reccommend these pieces also for Kel'Thuzad, he does pretty much Frost damage. Just make sure you don't gimp yourself too much in other stats. You do the math and judge on your particular example.

While I've never used FrR on any Sapphiron kills (10&25m versions, both on live and beta) and neither have my guilds, I can understand why some people want to use it (lack of paladin, fx). On KT you should only use it to mitigate frostbolts if you don't have any interrupters, otherwise the interrupters you have aren't doing their jobs.
