Ok so a little background. I've played a healer for the past three years. I've dabbled in tanking from time to time and I do enjoy it. I have healed with my priest, pally and druid (end game)
My main concern is that I'm not a good enough tank... At level 77 I have about 20k HP self buffed, 16k armor, 34% dodge and I can't recall my defense at the moment.
I just feel like I'm completely undergeared. When I tank an instance I am constantly chasing mobs that the other dpsers have aggroed. I usually go in with a charge on a mob, swipe once, then maul/mangle ( I have the maul glyph) then swipe spam if there are 3+ mobs... I just don't feel like I generate enough threat, but I certainly feel that I take too much damage. I've asked the healers if they're having problems healing me but they have all said that I'm "fine" I just don't believe them. I've been mainly focusing on Stam/Agi gear mainly because my original tanking gear was mix and match with some of my DPS gear. I have the
Wildfury Greatstaff with 35 agi enchant, it's quite secksy. I also made the
Indestructible Alchemist's Stone I will try to log out in my tanking gear next time I get in game. I'm mainly using quest greens/blues now for tanking gear. Any suggestions or anything would be greatly appreciated!

Get Infected wounds over Predatory Instinct. For now, your gear is fine but for an easier entry into 80 dungeons, get
eviscerator's set.
Then work on real
80 tanking gear for heroics.

I'll be honest, most of my tank gear was geared for the patch since I thought it would come sooner, but I had about 20k armor, 28k health, and 32% dodge at Lv80 when I started tanking Naxx and beat Patchwerk for the first try.
It is pretty easy to obtain frankly. The health, just snag
Borean Armor Kits for now, they usually run cheap and offer 12 stamina a pop in 6 gear slots. At one point, they were 5g each on the auction house, but a skinner/LW running through Violet Hold will get enough Borean Leather (among other things) to make you 6 of these with plenty to spare. Let's assume you aim for a different shoulder enchant (perhaps the Aldor one?) and head enchant (ZG? Outlands rep?), that's 48 stamina that you wouldn't have otherwise. Multiply that by your bear form modifier and Heart of the Wild for an amazingly cheap amount of stamina.
Also, as far as cheap gemming, there's a +18 stamina gem that runs for really cheap. Solid Chalophony or something? Green quality blue gem that I've picked up for as low as 2-3g. Now health shouldn't be your primary focus (mostly), but those are easy ways to boost you up.
These also run fairly cheap and will give you a solid boost to your legs in both of your primary stats.
EDIT: Took a second look, here's a few other things.
Idol of Perspicacious Attacks - Excellent for threat generation. Do some quests in the area, you can get it in a couple hours.
Enraged Feral Staff - The hottest pre-raid tanking staff we've got. Armor, stamina, agility. Drops from the last boss of Heroic UK, an easy heroic.
Staff of the Sorrowful Chieftain - It doesn't quite have the mitigation your current staff has, but the damage output for threat will be much higher. Also, it is an easy quest, solo'd it at 76.
Witch Doctor's Staff - Got a few patient friends? Drops from the first boss of normal Gun'Drak. Run this place to the first boss (handful of trash pulls at best) and then leave and reset until you get it. Shouldn't take too long, hopefully.
