Do you think I could tank Raid Finder (first part, siege of wyrmrest) with my gear (almost full 378)? I also have watched some youtube videos on the fights.

Thanks.

You'll do fine as long as you know what to tank, when to taunt, when to blow cooldown, how to avoid boss mechanic.
Basically,
Yor'Sahj - try to taunt boss when the other tank has like 4-5 stack of Void Bolt. Once you get 4-5 stack of Void Bolt yourself try to blow some cooldown, and be prepare to blow some major cooldown when the other tank doesn't know how to taunt and you get 8 stack of it.
Hagara - easily one tankable. Your choice if you want to be that one tank, but at least try to move away from her Focused Assault even though it hits you like a wet noodle in LFR version.
Ultraxion - the fight where you will get bashed really bad if you don't know how to avoid his mechanic and taunt at the right time. read the tactic thorougly and know the fight. You can easily one tank this fight as well, so at least prepare for it if the other tank doesn't know when to taunt.
Blackhorn - tanking adds should be simple enough. try to taunt Blackhorn when the other tank has like 3 stack of Sunder, taunt at 2 Sunder as Blackhorn loses more HP.
Spine - simple enough.
Madness - taunt when the other tank gets impaled.

as others have said, your gear is fine, tanking LFR is extremely simple if you know how to tank.

you know there is a maximum on 9 stacks in the phase right, so if the other tanks takes 4 or 5 then you should only take 4-5, there should be no 8, unless you mean that in following phase the tank doesnt know how to taunt. And even if you do have 8-9 stacks the fight on normal is easy as heck to 1 tank, let alone LFR.
The tactics in tanking are pretty easy to learn to dragon soul. Knowing little tricks though is what makes you a really successful tank. many of the fights are mere tank and spanks with some adds or something thrown in. Very simple. You should do fine.
but no matter, good luck!

Its pretty easy to heal one tank, as its only one tank you need to spam. The problem with lfr is that most healers joining as healers and dpsing, afking, leeching, have no clue what spells to use, etc.
So you tanking the boss very good will have nothing to do with you surviving it. Also there is OT syndrome, often visible in LFR. OTs dont have shields or beacons on them, its usually a big delay before healers get an idea about this guy tanking now, they keep spamming the mt and ot dies - even though he had better gear/better skill/better cooldowns active than MT, it usually blamed on ot being undergeared (even overgeared guy dies with no heals).
MT - MT is usually the guy who taunts a lot because he cant overaggro the the other tank normally and he cant find himself a good niche to do, instead just stands there and takes avoidable damage.
OT - is a guy who doesnt mind who is tanking atm, as long as the run goes smooth.

Yes, I believe I did saw stacks getting up to 9 stacks. But that was only once in my memory and normally it was mostly 8 stacks. That was some time ago also. These days, as I only run LFR DS as a tank with my Warrior, I volunteer myself to be the offtank. I always taunt when it gets even remotely dangerous thus I never saw stacks getting up to 5 stacks now.
But basically,

This and double this, well sort of.
This is practically the same in BH Alizabal also. I strongly believe Alizabal is one tankable even in 25man version. But the thing is, most healer just cease to heal the MT when they get Skewered as it is basic tactic for the OT to taunt immediately. MT getting squashed after being skewered, I don't see this as a sign of Alizabal not being 1-tankable. I see this as a lack of heal received, which can be easily covered if the healers are aware of it (I've healed tank through the whole duration of skewered, just so you know).
That said,
And even if you do have 8-9 stacks the fight on normal is easy as heck to 1 tank, let alone LFR.That's not for the tank to say. It's the healer position to say whether it's easy as heck or not. Besides, the OP is a Paladin tank. DK's and Paladin's way of tanking are different (can anyone spell AMS?).
Don't get me wrong. I'm not saying Yor'sahj is hard to tank or hard to heal. I'm saying one shouldn't speak in behalf of other's position.
MT - MT is usually the guy who taunts a lot because he cant overaggro the the other tank normally and he cant find himself a good niche to do, instead just stands there and takes avoidable damage.

Those kind of so called MT in LFR makes me /rolleyes. Distince boss fight where if the MT(or the OT) knows the exact boss mechanic: Zon'ozz. I got really friendly with Void Diffusion whether I was a tank, dps, or healer.

Beside being stun (turns off avoidance) and damage increase debuff, skewer is also a DoT. So if they completely stop healing the tank he may just as well die depending on how much hp he had before and how soon the other tank taunts.
