Question: What's better - Shadow or Holy Priest? I've been working my way toward Vampiric Touch, so I have a ton more Shadow Talent and spells. I've been happy with that so far. However, I recently read somewhere that some of my Holy Spells (especially healing spells) are inactive while using some Shadow spells. =( Is this true?

The term "while casting" is used by blizzard to describe the time you spend inside the 5SR.And for some history, earlier that term was correct. Your spirit regen would stop while you were casting spells, and start again once you finished. However, they found this overpowered instants, and decided to make the 5SR instead.

After the 2.4 patch:
Regen from Spirit (while not casting)
= (sqrt(Intellect) / 21.45) * Spirit
Total regen (while not casting)
= Regen from Spirit + MP/5 on gear
Total regen (while casting)
= (Regen from Spirit * .30) + MP/5 on gear
These are based on Theorycraft calculations by the folks at Elitist Jerks. No official model has been released yet.

As a clarification to the Five Second Rule (5SR):
You normally regenerate many every 2 seconds. Imagine a metronome that runs all the time, ticking every 2 seconds. If you are in 5SR, you will get little or no mana back. If you are Out Of 5SR (OO5SR), you will get your full spirit+int mana recovery.
So your normal mana regeneration actually gets given to you every 2 seconds, even though it is measured in how much you get back every 5 seconds. If it claims you'll get 250 mana per 5 (mp5), then you're probably actually getting 100 mana every 2 seconds when OO5SR.
The 5SR is triggered on several things:
You finish casting a normal or instant spell
that costs mana
.
You start casting a channeled spell that costs mana.
You are casting a chenneled spell, even if it is free.
This means that if you start casting a Greater Heal, and then stop before it goes off, you'll stay OO5SR, because the 5SR is triggered when a normal spell finishes. But if you start casting Mind Control or Mind Vision, the 5SR will start right away at the beginning of the spell. The last rule is odd... even if a channeled spell is free, you will still not regen OO5SR while the channeling bar is active. This means that Mind Flay will always prevent mana regeneration, even if it was cast using Inner Focus. As soon as the channeled spell ends (or when 5 seconds are up, if the channeled spell cost mana and the channeling was shorter than 5 seconds), you are back to OO5SR regeneration.
This means that you can cast two spells in a row sometimes, and still get mana back... if you cast Mind Flay, and follow it up with Holy Fire, you'll probably get a OO5SR mana tick. The mind flay lasts 3 seconds, so you will leave 5SR 2 seconds later... as you cast Holy Fire (a 3.5 second casting spell), you enter OO5SR for about a second and a half, meaning you'll probably (75% chance) have a tick of mana regen. Of course, you could get unlucky, and the 2 second tick wouldn't occur in that particular 1.5 second period.
That's more a thing that mages care about, rather than priests, since none of your normal casting lends itself to manipulating your OO5SR ticks like that. But it is important to remember that you do not regenerate mana while casting Mind Flay, Mind Vision, and Mind Control... they are all channeled spells, and even if they are free due to Inner Focus, you will not regenerate mana while they are channeling.

Please if you will...list a few ways that I can improve my 5SR gear and/or enchants.
I already have My Primal Mooncloth gear and Whitemend gear.
I tend to go for healing enchants, (weapons, shoulders, pants, gloves and bracers) my bonus heals are at 1740, fully buffed, and my Mana Regin 350 while not casting and only 34 - 50ish while casting.
Int: 438 (w/o Int. buff) 478 (w/buff)
Stam: 301(w/o buff) 380 (w/buff)
spirit: 355 (w/o buff) 405 (w/buff)
I know my gear will improve as I run more raids...so I'd like to know where to go with enchants. I don't run out of mana often and I seem to stay alive as long as I remember to shield and Renew myself during personal attacks...but if there is a way to get my Mana Regin up...I'd like to know that. (Other than the great advise you have given here of course! Can't wait to put it into action.)

First, there are a few abilites and items that will make the 5SR less painfull:

Meditation
Second, there are some items and abilities, that help you to escape the 5SR completely.
Eye of Gruul
Holy Concentration
Inner Focus
Third, we habe those items and spells, that allow you to draw more mana regeneration from your time outside the 5SR:
Bangle of Endless Blessings
Earring of Soulful Meditation
Maybe some more... you get the point ;-)

If you have to heal while innervated try to cast the last spell 5s before the buff ends, you will then have 100% mana regen under and after the innervate ends.

MP5 is some kind of "fire-and-forget" stat. You collect it, and it works for you, regardless how you play.
But spirit, especially with the huge changes to spirit-based-mana-regeneration in 2.4, is much more powerful when you are able to handle it properly. I have done my calculations and will switch to a very spirit-heavy gemming once 2.4 hits the road.

Have an f-in' high mana pool.
The amount of Int you would need to last a 10 minute fight would be ridiculous. The longer the fight lasts, the more valuable mana regeneration will be compared to your mana pool.

– Spirit regenerates mana every two seconds (referred to here as a "tick") by a specified amount based on the character's level and the amount of Spirit and Intelligence that character has. The regeneration rate is typically expressed as Mana Per 5 Seconds (MP5) which can be calculated by multiplying mana-per-tick by 5/2.
with release of 2.4, mana regeneration formula is now uniform across all classes and can be calculated with the following formula:
MP5 = 5 * (0.001 + sqrt(Int) * Spirit * Base_Regen)

Pitbull
(a GUI mod) gives you a visual representation of the 5SR, you can use this to better understand when you have MP5 WC and when you have full MP5.
It also shows for your target, how much health your healing will yield.
As well as healing from other healers.
