Firstly, they're going to mess around with talents before and on the advent of WotLK. Predicting level 80 builds right now is pretty pointless.
There's been plenty of discussions regarding the benefits of off-handing a shiv as opposed to a shanker (or mutilator as of 2.3). Read the top entry in the following link:
