When I leveled mine, I went Prot at lvl 40, didn't regret it, and never looked back.
You can still level efficiently due to damage output with Revenge and Shield Slam, and of course, you're perfect for instances.
For my professions, I went engineering... though mostly because I wanted our crafted mounts. The epic goggles you get at the end are great too.;P
Bsmithing is extremely helpful as you can make yourself a ton of nice gear.
Also, just be sure to keep yourself educated. Always read stickies on forums, and you'll find a wealth of knowledge.
