I would love to see way more of what they did with the Wrathgate chain and Icecrown. Icecrown ESPECIALLY!
Blizzard's new phasing technology is simply amazing. Instead of turning those guys and killing dozens of mobs at the Shadow Vault only to get told "We'll begin the attack right away" but it never happens, it actually gets assualted, and you helped this happen, you even take out their commander, and then the area becomes a brand-new quest hub!
That
is what Blizzard needs to do in the inevitable 3rd expansion. Phasing makes it all much more realistic, instead of killing that commander, then aggroing him flying through later and killing him again, you kill him once, and hes dead, to you. Sure, it makes it harder to get a few friends to zoom you through quests, but most group quests in Icecrown occur towards the end of their chains and areas anyway. The Fleshwerks actually comes under attack once you do the chain, and while its not exactly conquered yet, you can see that because the Lich King will fight with all his might to keep that particular location under his control.
The new fourth war between the Horde and Alliance also adds to the plot, and makes me want to play more. Having something go WRONG for once is good. The tales cant always end happily. Bad things in the plotline is a good thing for the plot itself, just look at what happened to Durotan, Doomhammer, Arthas, Illidan, Kael'Thas, and countless others.
Blizzard needs to base their next expansion off the styles of Icecrown and other phased areas. That would be bloody awesome.

If you stop and look you will see alot of lore quest lines in this expansion, some that take up almost all of an areas quests. Battle for undercity takes up alot of time in dragonflight, in grizzly hills you help a troll become a powerful minion of the lich king only to have to fight him in gul'drak. Icecrown has 2 areas that you literally build the towns to get quests from, and Storm peaks has a 50 quest chain that has you kill loken while opening up 2 quest zones.
Yes it is still kill X boars, but now you know why you need to kill them and how they came to power. If you had read the quests instead of just hitting accept this would make more sense, and you wouldnt be asking for 1 quest per lvl.

Truth be told, the "kill 10 boars" style quests are bit redundant at this point... but that's just something I've grown to accept about WoW. Not to mention that by killing those 10 whatever, you're saving innocent villagers! Or whoever you're killing them for...
Dragonblight is my favorite zone thus far (haven't gotten to Icecrown yet, tho I'm really excited), those quest lines are just epic.
This xpack seems to be an experiment on Blizzard's part with the new phasing technology, and introducing an in-game cinematic of that caliber. I'm looking forward to the next xpack for the improvements Blizz will make along these lines. Imagine whole zones 100% phased. After you do your "go kill 10 boars" quest... There's no more "boars". Only daily quest mobs would be back, but there'd be lore to explain why. Also it'd get rid of that "so if I saved this village, why is it still under attack?" feeling.

I like your idea of a few quests that give massive amounts of xp, but are also long and truly epic.
I have a feeling that maybe they would just go ahead and make the level cap 100?
Personally if there isn't a vanilla wow server available by the time the next expansion comes out I probably won't play
