So I've just hit 80 on my first character, a Frost Mage. At the moment I'm honor grinding to set him up for Arena, but every once in a while I want a quick break, so I'm thinking of starting an alt. I started a Rogue recently, and think I might like the play style, but I am also considering a tanking class. I'm torn between which tanking class I should choose. I am automatically turned off at the idea of a Paladin though, so pretty much anything besides that. Any comments or personal opinions would be great.

DK's can tank, and fairly well.
Bears are good tanks.
Warriors are excellent tanks.

Bears are awsome tanks + very easy to gear! With some pvp gear you can get pretty far and never have to care about def rating (wich is godly). Fun with droods is that you can do all 4 roles in game.
Warrior tanks are harder to tank with but also fun.

bears are great tanks, a fun class to boot, and due to their specialist nature are more simplistic than warriors, great if you see yourself wanting to change roles now and then
warriors are the original tanks and being that they only have 2 roles they've got a wider range of abilities to facilitate that role which means it's slightly more complicated, 2 very fun and competitive dps specs if you need a change of pace
DKs are good tanks but unfortunately the
lack of a block mechanic will bite them in the but
t, 3 very competitive dps specs and even 3 different variations to tanking if you like variety within your tanking

That is usually the way it is for me as well as a healer. I have to heal DKs the most, next to warriors, next to bear druids. Pallies require the least healing. Earth shield + totem, then go make a sammich.

You are going to get a lot of opinions on tanking classes. Blizzard tries very hard to make them all equal but they all have strength and weaknesses. I'm not even going to touch base on any of that here because it just starts more flame more debate.
It's just pointless because everyone is right for different reasons and they all have passion behind why they argue the points they make, because, they are all right.
I will only tell you that all tanking classes are good at tanking and they all have weaknesses. Some today are OP, and in BC others were OP. The point i am making here is what is a good tank today may be a crap tank in a patch or an expansions. - but not really, again blizzard tries to make them all comparable but sometimes fails and opinion change from patch to patch.
In BC my main raiding toon was a shadow priest, we did crap dps but were a required raid utility for mana regeneration back then. I liked the Utility role, in WotLK, in fact before WotLK came out they gave us an updated talent tree. We were the same as we would be when WotlK dropped with the expecton of 10 talent points for 80. I went from near bottom of the dps to THE top of the DPS in our 25 man because of one patch. Shadow Priest were walking around with huge grins.
I have 7 80s, I love them all I have 3 tanks - every class has its benefit and weakness. From a tanking perspective there is not an instance or a raid that i do not think, "i wish was tanking on my ____ " then the next thing you know i'm thinking, "glad i'm on my ____"
I will recommend you roll a Druid, my Druid is Resto (main spec) but has a tank set. So i'm NOT recommending the druid because it is the best tank - but she can damn sure tank. I recommending the Druid because of what you can do with it:
Caster DPS (Boomkin)
Melee DPS (Cat)
Tank (Bear)
Healer (Tree)
You will get so much fun out of a druid and they do all roles very well and bring buffs to the raid, some specs more than others.
It is funny that you say you do not want to roll a pally, that is the only tank class i do not play. I love Paladins, I want one or two in my raids, but I have also come to hate them because pre WoTLK it was the most popular class, and guess what, even with all those DKs, Paladins are still the by far the most common class in WOW - assuming our loved armory data mining sites are correct.

My frost DK was a stellar AoE tank that kept ripping aggro off the better geared tank when we were splitting adds.
I say was because he is semi-retired (not into him so much any more) because I use my prot pally to tank, and I prefer my pally over my DK.

Make your choice, broheim.
You're going to be leveling an alt while still playing your main. Not knowing how much time you have to play, it will take you a bit to get your tank leveled, geared, and some max level tank playing experience under your belt.
Given that you said "every once and a while I want a quick break" and while that's entirely relative, it will probably take you a while to get all that done and be ready for maximum tankage. Just reminding you that 3.3 will be launched pretty quick here and Cataclysm is on its way after that and they've stated (as per usual for an expansion) the talents are getting a major overhaul. So things could change.
Short version is don't base your choice on lists of which tanks people say are "best". Those are opinion, and it depends on what you like to play, and will be changing anyway once 4.0 ships.
