Briefly, engineering is great for both, and if used properly (bombs on every cooldown) can even surpass JC for PvE in terms of equivalence points. But if you're not into all that jazz, go with JC and either of the others as they're all about the same.
That said, and as others have suggested, BS can be considered slightly better since its extra sockets give you a choice as to which stat you wish to stack (Arp/Agil/AP), as opposed to LW, Enchant, etc. which shove AP onto your lap indiscriminately.
It all boils down to min/max'ing. Mining and herbalism provide no dps buffs, while skinning's (extra crit) is blah at best.
