Until you get 2 piece of tier5 or have 25% crit, you're much better off sticking with affliction as a raiding spec. 41/0/20 or if you're raiding maybe 42/0/19 with some variation

there's alot of demo warlocks because until you have 25% crit and 202 hit there's not much of a point in being destro; it'll be inferior in dps as well as the lack of raid utility/usefulness (destro doesn't really bring anything to the table over an aff or destro warlock).
you want spell hit for raids because bosses are I believe lvl 70 or 73 elite which means they're higher lvls. Thus you have a chance (17%) to miss spells or attacks against them and need lots of hit rating in order to reduce your missing. As a sidenote suppression will improve your hit for DoTs/aff spells but not Destro ones such as shadowbolt.
otherwise as aff, you want as much spell dmg as you can (prob 700+ buffed before setting foot in kara if you're into raiding).

reasoning is as follows:
5/5 suppression until you get a decent amount of spell hit (remember that suppression doesn't help your hit for non-aff spells such as shadowbolt)
you want 2/2 imp lifetap since it's something all warlocks do
fel concentration and 5/5 shadow embrace aren't needed; for the most part they're filler talents. you can put 1 point in SE for another debuff for the imp drain life bonus....
CoEx and howl of terror talents are for pvp; useless for raiding.
Devastation and Destructive reach make shadowbolting more damaging.
Forgot to mention also that you see some demo warlocks because if they pvp SL/SL is still a popular spec.
As to your other question about warlock utility, you bring a warlock for dps, HS, wipe prevention, and curses I think. An aff warlock can bring malediction (13% CoS/CoE), and siphon life + drain life which adds to mana efficiency/healing. A demo warlock can among other things make better healthstones (you can have 1 of each rank so 3 diff max at a time)....while all a destro warlock brings to the table for raids is ISB, which is usually not that hard to keep up if you have multiple warlocks.

how to play affliction in PvE
step 1: download DoTtimer addon
step 2: keep all dots up at all times. Spam shadowbolts in the gaps. Lifetap every other cycle.
step 3: return to step 2.
how to play affliction in Battlegrounds:
Keep other players between you and your targets so they go for them not you, then dot them to death. If you get ambushed, trinket, death coil, fear, dot, run. You get ambushed by more than 1 rogue/melee, just forget it, DoT them as you go down as an assistance to any surviving teammates and return to GY.
How to play affliction in Arena:
this could fill a whole other thread. won't go into it here
