It's hard for me to say what you should start leveling as because I leveled pre-3.0 and everything has changed so much. Right now I'm Arms, it's extremely versatile and a blast to play, but it stunk leveling that spec from 45-68. I was at 68 when 3.0 hit and suddenly I was having more fun than I've ever had with this game. I can do great DPS if that's what I'm in the mood for, or slap on my tanking gear and lead five mans without respecing.

For 5 mans, tanking is more fun.
For 10/25 man raids, tanking can be more fun if you are the MT, but personally I find dps as fury more fun in raids. I do love tanking heroic 5-mans, tho.

I was fury until 70 and then I switched to prot to do Outland instances just before the expansion dropped. I was a little disappointed before the patch (my tank gear sucked hard though). After the patch it's a whole different story. Finding plenty of great gear in Northrend, dps is vastly increased (close to 900 in Outland instances), and then there's the fact that nothing in this game has ever given me the adrenaline rush like being a MT. Not every time but when things get a little wild and you manage to hold it all together and keep everyone alive it's great.
When dual specs come out I will be switching to TG fury (TG - hit penalty = holy facemelter batman) to run friends through old content or farm enchanting mats, but I'm pretty much a tank for good now I think. Love it.
