I've heard varying opinions about which to use, depending on the amount of resilience your priest has. It's generally accepted that 28/33/0 is a good all-around priest spec and that 51/10/0 is better if you have a large amount of resilience (300+). I personally use 51/10/0 and I fell in love with it the instant I tried it in pvp on the 2.3 test realm. I still use it to this day.
