Each class is challenging in its own way. In the PvE environment every class is responsible for their job making sure they have to be aware at all times. In the PvP environment there are a lot of classes that can be screwed over easily just by using half their CDs.
It comes down to the environment, what class you are, what class your up against in PvP, and how well both classes are played in PvP.

What is the most challenging class to play in World of Warcraft? If so, why? I am more geared to a PvE environment as well.
I am bored of rogue, mage, and druid, I want to try something fresh and new. =].
Well it depends on what you mean by challenging. I take it to mean the class that takes the most player skill to get the full potential of the class. Using that definition I say it is druid.
Why Druid? Because no other class can/has to master all the major roles in the game. A druid can be tank, healer, ranged DPS, or melee DPS. And unllike the hybrid classes they can pick up some of the off tanking/healing with a shape change and a regearing.
If all you want is a challenge leveling then level to 70 as naked priest with no spec :)

Or a Shadow preist because no one wants you in a group so its hard to lvl
OMG. I would pay a shadow priest to group with me when levelling. They offer heals when it gets tight on you and their ability to constantly DPS without the downtime of mages is godly IMO. Of course I have a level 70 S. Priest so I might be biased.

The most challenging class to play is a Paladin.
You may think that all we do is bubble hearth, but it is very difficult to be one.
First off, we can do everything, but not as well as everyone else. While we can heal a 5-man the best, a Druid is better for raids, because we don't have a HoT. We can tank 5-mans the best too, but not for raids (other than AoE tanking adds) because we rely on mana, and warriors' rage is a lot easier to get. Ret Paladins are the best spec for us to raid, but they still suck at it. Although they make great raid support for bosses (SoL/SoW on the boss, and some off-heals), we go OOM too quickly.
Holy Paladins (like myself), are the slowest class to level (except for maybe a full Holy Priest). We can survive, but all our damage (while very low already) requires us to have a lot of mana. Only thing a Holy Paladin can do is heal a 5-man very well.
Prot Paladins are good for leveling, mainly because of their ability to kill a lot of mobs at once. Best 5-man tanks, but other than that... you've got about 45 seconds to kill the boss, or we generate no more threat.
Ret Paladins make very good levelers, and pretty good PvPers, yet there are much better options for DPS. A Rogue or Mage is better.

Druids. The first 10 levels are a total rump, and the second 10 aren't too much better. In fact, you can't even get much benefit from the standard levelling build until level 20 because you don't have cat form.
Put simply, no other class has such a barrier during its early levels.
Hunters have the same problem, except they get a pet at lvl 10, which helps, but not too much until they get feign death at 30.

warlocks arent peace'o cake in pvp mates if you cant fear you are dead and if you are alone thats how easy it its..!
