Which class is most enjoyable to level with variety

Question: Which class is most enjoyable to level and is not static from 10-90?
I am coming back to WoW after a hiatus during Cata and MoP and would like to start fresh. I am hoping to level a character or two from scratch and to take my time. I want to read quest texts, actually get into the secondary professions like fishing and archeology to explore their rewards, and generally enjoy the game instead of rushing to 90.
I want to start with just one class that I can take my time with. So which one is the most enjoyable? One thing I'm looking for is variety in the leveling experience--as I level, the new spells and abilities will change/enhance the playstyle of that class/spec. I don't want to pick a class and have the rotation never change from 10-90. Given my brief inspection of the changes, warlocks seem to fit nicely in that within their specs you gain several new abilities that modify how you play as you level.
Also, it would be nice to have at least two good specs that both feel different but also feel effective. Druids obviously come to mind as you can do range or melee specs.
SO which classes have you enjoyed and why?

Thanks ftpTwink. I understand that what I like may be different so that's why I would love to hear why people enjoy playing a class.
For example, I remember enjoying my frost mage due to the control abilities for tougher enemies like elites, but I did get frustrated that the playstyle and rotations remained the same especially when I had good enough gear to just spam frost bolt. They would be slowed/frozen and never reach me before my FB spam took them down.
Having two specs to switch between will be nice if I get bored, but I am most interested in specs/classes that feel different as you level. Playing X spec at 10 vs 40 vs 70 should hopefully feel different enough not to get bored.

I really don´t think many specs change drastically because for the most part you get all your main abilities at lvl 10.
my suggestion would be to go cat-druid / moonkin druid and switch every 5 levels. Leveling quests are very easy, and if you aren´t in a rush, you should have no problems keeping both specs updated with gear.
Also stealth is a great ability to have if you want to do archeology and fishing while leveling.
