It's not the spec, it's the player. And it depends. If you have a 10man group you might ask the lock to go a specific spec so to cover a buff that no one else can do. In 25 that's probably not an issue. But as I said, it doesn't matter if you have the most powerful spec in the game if the person playing it is rubbish.

This is overall total damage for warlocks in all Cataclysm raids. To the right you can choose a specific encounter and see what spec that does the highest damage on specific encounter. Might give you an idea what to use.

As Asakawa noted, all 3 specs work - exceptionally well - IMHO. I personally prefer Demo but I always keep an off-spec Affliction or Destro based on the fight. If it's Maloriak, obviously I got Demo. If it's Halfus and the whelps are up, ok fine, you got me, I'm going Demo. Guilty as charged Your Honor.
Not only are all 3 specs playable/viable, but all 3 are enjoyable to play. My only gripe about the game is that I can't tri-spec :)
Affliction and the Soul Swap is so much fun it almost feels like cheating. And Destro has a hyper feel to it with the constant spell procs and burst damage that it's a blast to play. And it is a blast to play.
Just go dual spec and enjoy the off-spec that you're playing.

As said, it depends on a lot of things, and usually, the differences are fairly negligible. A lot more goes into what the player does, but also the encounter itself. If I'm running something like Maloriak, I'd rather run in Demo, but if I'm doing Conclave- and especially being put on Rohash- I'd rather run Affliction. You'll have to see with your own playstyle and individual encounters which spec you can run the most effectively.
As with everything, no one can "tell you" what's best, because a DPS chart could say that Destro's at top, but the best Demo player could be garbage at Destro and watch his numbers fall through the floor.

There has been no defintive "best spec" since early WoTLK. Arguably since TBC when blizz's "Bring the Player, not the Class" came in. Anotherwords go demo!
