Which professions to pick?

Hello :)

I've made a Priest and Paladin, and I'm wondering what professions to pick for the both of them.

I've kind of been toying with the idea of my Paladin having Jewelcrafting and Mining, and my Priest having either Inscription/Herbalism or Enchanting/Tailoring.

I don't mind if they have professions that are interdependent between the two classes, either.

Anyone mind helping? :o
Not too concerned with the money making aspects honestly, just something that .. fits them.

If it helps, my Priest will be mainly PvE Healing, and my Paladin will be Tanking.

Priest > I like tailoring/enchanting. Since Priest is a clothie it's nice to make your own gear occasionally. I have a mage doing tailoring/enchant and it works great.

Pally > JC/Mining is a great combo - you being a pally doesn't matter as any class benefits from JC/Mining. Might think about Mining/BS - could help occasionaly with gear for your pally.

Same is true with Herb/Inscrip - all classes can benefit from this combo.

Another thing to think about is what roll are these toons going to fill. Pally tank/healer/dps. A tank could benifit from the mining bonus. The herbing bonus could also be useful. Same question for the priest healer or dps.
