Ok, there IS one way to become a Tauren Rogue. Here's what you need:
1) A high level
Alliance
Character
2)
http://www.wowhead.com/?item=30544
3) Luck
If you get the debuff, this can be quite fun :) Also, every time you stealth/unstealth, you change into a different race.

well heres my insight on why there are no tauren rogues
RL reason: if you have an armware/ aka a giant movable closet, jump into it and try to move around quiet like in it... thats why
WoW reason: because the tauren have no evil in em... i mean they dont even have any rogue/warlock trainers in TB worst they get is mage...
fun reason: you just cant see em... i mean ever try grinding herbs? no nods? theres your tauren rogue herbalist!

the fact is the same reason for no dranei rogues. The feet. have u ever tried stealthing with hooves?
But in Warcraft III, they're COMPLETELY INVISIBLE.

Tauren Rogues suffered the same problem Tauren Druids do: No matter how hard they try, their horns are always visible.

Even if a tauren COULD be a rouge, it'd be hard to play one. To play a rogue (especially in PvP), you have to continuously move around your opponent and get behind it, which requires being quick. Yeah quick tauren? I don't know about that.
However if you are making a tauren and like the whole rogue experience, make a feral druid. Cat form is very similar to being a rogue.
