I also thought for some time she might be a troll, because they seem like the most ancient race. However I also think she might be a tauren, because of their Earth Mother and whatnot and we also don't know if they aren't in fact more ancient than trolls, because they don't leave around architecture like trolls do (pyramids), because taurens have nomadic lifestyle and use rather wood and leather for their dwelligns. She could also be a dragon, because those are present on Azeroth and not on other planets (as we know so far). If Azeroth is gonna be another human or elf, I'm gonna be disappointed, because it wouldn't be unique.
I'm not sure I agree with the premise of Azeroth being 'born'. It might already be alive and it as a world is it's natural form. It is the Void Lords and the Titans who want to manipulate the energy that makes Azeroth the world it is into a sentient being of order or void.

It's probably just a sentient ball of energy until the Titans/Old Gods/Harbinger/whoever captures it and Frankensteins it into a body made to look like themselves.
What about Tauren, they are not Titan creations. Perhaps Azeroth is the Earth Mother? In a manner of speaking, she already is.The Tauren revere the Sun and Moon, An'she and Mu'sha, the eyes of the Earth Mother.
