My favorite achieve is the Accomplished Angler. The "Salty" title is a nice reward for all the bleary-eyed fishing you have to do to complete this.
Whilst it wasn't an achievement at the time, my favourite would have to be Elders of the Dungeons. I did the first dungeon elders when I was level 51. I remember the level, because when it came to the end of the world event, I had to grind like a madman to get the recipes, which needed 52. I did it with 10 minutes to spare before maintenance.Anyways, the Elders... It was a few low level dungeons and a few high. The hardest was Dire Maul North - bearing in mind I was too low level to run it properly, I had to rely on my roguish guile and stealth through. This was a challenge - there are a lot of patrols in that dungeon. I had to make full use of distract, sap, and sprint-vanishing to get through it. There were dogs around which could see through stealth, and quick little Eye of Killroggs which called reinforcements if not killed immediately. In the end I had to leroy into a group and complete my clicking of the guy before I died.By contrast, getting the coin in LBRS was a breeze!So yes, my most proud achievement. The only more impressive thing I've done is solo'ing the Karazhan Chess Event with all the trash still up - but there's no achievement for that at all!

Amani Warbear and Hand of A'dal feat of strength.Though wasn't too much of an achievement back in the days, it's a veteran symbol.
I have to say the achievement I'm most proud of is Insane in the Membrane.I thought near the end of LK it was being taken out so I pretty much ground out the entire achievement in less then a month. Needless to say I was exhausted at the end of that trip. Even though it didn't get removed, I'm still rather proud to own that title and achievement.
Definitely the Frozen Throne achievement. I love being a kingslayer.
Im most proud of the fishing achievement for the sea turtle mount "turtles all the way down", which took over 15000 fish in Northrend before i caught him.
I know this sounds silly but I really rejoiced when my guild went back to do Glory of the Ulduar Raider (10 player) after downing Arthas. We wanted to give ourselves a fancy reward for finally defeating LK as a strict 10man, and to keep the raid team from falling victim to ennui in the lull between WotLK and Cataclysm. Ulduar was, and probably still is, one of our most loved raids ever. Firefighter was still a pain, even in the better gear, and Yogg +0 was mind-boggling (pun intended). We were never about server firsts or world firsts, or even competing with other guilds on the realm when it came to progression. We wanted to do it just to say that we did it and, to be honest, I think it gave us a greater sense of satisfaction and accomplishment than LK!
I Can't Hear You Over the Sound of How Awesome I Am. Must be the achievement that the holder of it deserves utter respect. It has THE best achievement name and only a limited amount of players have it which makes it an achievement wanted by everyone.Mmmmm. Elitism!

Has to be What A Long, Strange Trip It's Been! I'm more proud, though, that I was able to get it in September 2009, during the first day of the first Brewfest after WotLK.
Achieve I'm most proud of is killing the Lich King. We tried so hard to accomplish this before Cata came out and we finally did it 2 weeks before launch.
